Add flag --override-input to override specific lock file entries

E.g.

  $ nix flake update ~/Misc/eelco-configurations/hagbard \
    --override-input 'dwarffs/nixpkgs' ../my-nixpkgs

overrides the 'nixpkgs' input of the 'dwarffs' input of the top-level
flake.

Fixes #2837.
